Perfect Your Grilled Cheese with Protein and Heat
Two slices of Wonder Bread and yellow cheese make for a stupid-easy and quick lunch, but they can be so much better. Professional chef Jennifer Iserloh offers ideas for balancing and making the ultimate comfort food a smidge healthier.

Iserloh suggests adding non-salty protein to your sandwich to make it filling and offset the gooey-ness of the cheese, and going beyond white breads and cheap cheese as components. We're gravitating toward this idea, though:
Add Tang or Heat
Coat one slice of the bread with one tablespoon of honey mustard, sweet pickle relish, a sliced jalapeno or sliced sweet peppadew peppers or jarred tomato salsa. For the serious hot head, try one tablespoon of thick hot sauce like Sriracha or chopped kimchi.
While you're assembling your no-stress lunch, keep in mind our previous advice on cheese grillin': toast the bread slices, then turn them over and put the cheese on that just-grilled side for evenly-melted cheese.
